Hcg P3 healthy low carb apple pancake

I was really really hungry but debating in what to eat easy and healthy for breakfast and I just thought will there is the version of this mug muffin in I thought I could adapt it to make pancakes.

Ingredients:
1 hole egg
4 egg whites
1/3 cup of flaxseed meal
Stevia to taste
Cinnamon to taste ( I used half a teaspoon)
1 medium dice Apple
1/8 teaspoon of aluminum free baking powder

The first thing to do is either kill your Apple or leave the skin and dice it in small little cubes. Next  sprinkle your Apple with stevia and cinnamon. I pour lots and lots of cinnamon because I am crazy about it, but is really up to your taste.

Then put it in the microwave for about 5 minutes

Now we can start mixing, in a large bowl add the eggs the flaxseed more stevia and cinnamon under baking powder it's so easy that you can mix it with a fork. Wait a few minutes for the baking powder to start bubbling and then give it another mix. Now you can pour in your diced half cooked apple, mix really well.

Now you can heat up your pan use Teflon if you want to avoid having to greased the pan.

This mixture makes enough for 3 medium sized pancakes. Cook them for about a minute on each side, and you are done!!

You can pour some low glycemic low carb syrup on them but they are so delicious as it is, that I just eat them like that.

I jusy got a present from my Bf, ....a monkey tea!

Del baúl de los recuerdos. Cuando era chiquita mi abuelito viajaba mucho y siempre me traía alguna cosita. Entre esas tantas, a veces era este pan que compraba en Amecameca. Yo recuerdo que entre mas seco se ponía mas me gustaba.
Y en aquel entonces cuando no tenia que preocuparme por limitar mi consumo de azúcares, lo bañábamos con leche condensada o un chorrito de rompope! yum yum. Abuelito este va en tu honor :)

**Gracias a mi prima Claudia (Cheff profesional) que compartio la receta conmigo y me conto que este pan es originario de Oaxaca.


::::: From the chest of my memories. When I was little my grandpa traveled a lot and always brought a little something. Among those many, sometimes it was this bread that he bought in Amecameca. I remember that the more dry it became the more I like it .

INGREDIENTES:
  • 3 Huevos (separados)
  • 3 Cucharadas de azucar
  • 4 Cucharadas de Fecula de Maiz
  • 4 Cucharadas de harina
  • 1/4 Cucharada crema tartara o vinagre (opcional para estabilizar las yemas batidas)
INGREDIENTS:
  • 3 Eggs (separated)
  • 3 tbsp sugar
  • 4 Tbsp of Corn Starch
  • 4 Tbsp of flour 
  • 1/4 tablespoon cream tartar or vinegar (optional to stabilize beaten egg yolks)


PROCEDIMIENTO:
  • Batir las 4 yemas junto con el azucar
PROCEDURE:
    Beat 4 egg yolks with the sugar

    • Batir hasta que doblen su tamano y esten a punto de cordon
    Beat until doubled in size and consistency are at Loop

    • Separar en otro recipiente. Y si estas usando el mismo contenedor para batir las claras, entonces asegurate de lavarlo muy bien y secarlo antes de comenzar con ellas. Mas vale prevenir que lamentar y que no se batan correctamente las claras.
    Separate into another container. And if you're using the same container to beat the egg whites, then make sure to wash it well and dry it before you begin. Better safe than sorry and not properly whites churn.

    • Batir las claras por separado hasta tener una firme consistencia y agregar la crema tartara e incorporar la mezcla de las yemas
    Beat the egg whites until they are stiff, but not dry, 
    add cream tartar or vinager and fold in  the egg yolk mixture


    • Batir en velocidad media por un minutito. Retirar la herramienta de batir y usando una espatula incorporar el Harina/Fecula de Maiz con movimientos envolventes. 
    Beat on medium speed for three minutes. Remove the whisk attachment and use a spatula to incorporate the flour / Corn Starch with folding movements.
    • Cubre con papel encerado el fondo de tu molde para hornear de preferencia.
    Cover with wax paper the bottom of your baking dish of choice.
    • Y hornea a 375°F o 190 °C por 20 minutos. Uhhhm ya puedo comenzar a revivir mis recuerdos con el aroma del pan recien horneado.
    And bake at 375 ° F or 190 ° C for 20 minutes. Uhhhm and I can start bringing back my memories with the aroma of freshly baked bread.
